Is there a way to generate list results for all people with the associated person ID? Also, if I delete people from my tree does it change the ID numbers around at all?

If you open the List window, via the entry in the Navbar at left, and go to People, you can use the blue up/down arrows in the column header to set one of the columns to display Person ID. You'll find that option under Numbers in the pop-up that opens when clicking on the arrows.

Also, if I delete people from my tree does it change the ID numbers around at all?

No, the ID number assigned to that person becomes unused and all other entries maintain their existing ID numbers. However, unused ID numbers will be re-used when a new entry is added -- e.g., if you have Person ID's 1, 2, 3, 4, and 5 and you delete entry #3, then add a new entry, that new entry will be assigned Person ID 3.
