Timeline chart: I can only create a timeline, if I have the date of birth?

That's correct. A change here would be something for the Wish List.

Although I entered persons as unrelated persons, I have now a grandson and his grandfather, both at the beginning as "unrelated person": how do I now connect both, without knowing who are the parents (of the grandson) or the children (of grandfather)? Likewise with a niece ...?

You would need to enter placeholders entries - basically entries with a name such as "Unknown [last name]" -- in order to connect them.

How do I separate 2 people? I incorrectly added a daughter to a father! But she belongs to another person!

You can use the Clipboard to unlink the entries and re-linkg them where appropriate. In this specific case you would go to the incorrect father and drag the woman in question from the Children portion of the Family View to the Clipboard sidebar, then navigate to the correct father and drag her from the Clipboard sidebar to the Children portion of his Family View.

You can unlink them using the Clipboard as above - drag them from the Family View that they shouldn't be in, into the Clipboard sidebar.

Preliminary note:
From a german medieval-book “Castles and Residences” I attribute the owners, stewards, aristocratic dwellers, knights and fiefs, etc., all as "unrelated persons." Basically I would like to have only a timeline of people and their castles.
Questions:
-- Timeline chart: I can only create a timeline, if I have the date of birth? But I want to create a timeline with the field “residence", it has a date input field, too! I want a timeline of people and the place of residence or when someone has owned the property ...
