How do I add a line to the main card

I'm not clear what I mean with the title I'm sure. What I want to do is on the main cards where there is "Birth", "Death", "Occ", "Educ" etc how do I delete some of these choices , and add others like "Burial"? I can't find anyplace that allows this. Hope this is an understandable question.
